Hudson's has always been different. In the days before large coffee
chains in the UK, Hudson's delivered service from the heart: cafetière
coffee, smoked salmon & cream cheese bagels, hot scones with clotted
cream and provided luxurious armchairs to lounge in and tail coated
waiters with cut glass accents to deliver the goods.
So,
we have developed Hudson's along the way, always intent on great food,
sourcing exclusive items and bringing a sense of fun and personality
to serving our customers. We have won awards from Egon Ronay as The
United Kingdom Tea House Of The Year in 1993 and listed every year
from 1993 to 1997 (the year the guide ceased publication). Hudson's
has made numerous television & radio appearances and been featured
in The Daily Telegraph, The Mail On Sunday and The Observer. We are
one of only two British coffee houses in the 1997 Australian publication"In
Search Of Great Coffee" listing the world's most famous coffee
houses and are privileged to count a huge number of our customers
as friends.
Hudson's have recently
expanded by opening a further Coffee House in The Birmingham &
Midland Institute, a revered, classical library and conference centre
in the office quarter of Birmingham. Since January 2001, Hudson's
has been run by management giving Tim Penrose more time to concentrate
on the expansion and detail of the business and indeed preparing the
company to expand via franchising.
In June 2003, Hudson's
relocated its business from The City Plaza to a prestigious new site
in Colmore Row.
It is from this background
that the Hudson's franchise package has been prepared to ensure that
each new Hudson's maximises the opportunity for profit in such an
competitive market.
Hudson's
franchises: how the franchise works |
Hudson's prides itself on its attention to detail in its provision
of fast, made to order food in a warm and comfortable environment.
The franchise can be divided into
4 separate revenue steams, each to a certain extent dependent on the
others :
* Coffee House income through the
sales of food and drink
* Gourmet Food Shop income through the sales of fresh gourmet food
* Outside Function Income through the sales of delivered sandwich lunches
* Cheese Talks and Presentations to local organisations and groups
Each
division of the business feeds off the others. For example, a business
customer from a local office might come to Hudson's initially for a
sandwich and a coffee and then find he purchases some fresh cheese or
a gift of chocolate on his way out one day. As his confidence in the
brand increases, he might be persuaded to choose Hudson's as his office
supplier for sandwich lunches and then might arrange for them to speak
at his local business club about cheese one evening. Through this there
is a continuity of the brand in the community and a crossover of business
from one section to the next. This maximises revenue (whilst restricting
overheads) and ensures a profitable business as quickly as possible.
The initial investment required
is as follows :
* One Off Up Front Franchise Fee of £15,000
* Ongoing Management Fee of 8% of net Turnover of the franchise
* Liquid capital of approximately £85,000 to fit out a suitable
premises
It is likely that prospective franchisees
will be able to seek funding from The Royal Bank Of Scotland who work
very closely with Hudson's in providing franchise start up finance (subject
to status).
The Systems
As
with the majority of quality franchises, the systems in place in the
business are absolutely crucial for the ongoing success of the franchise.
They have been borne out by years of hard work and are tried and tested.
There may appear to be no particular logical reason for specific methods
initially, but they all go to make up a crucial profitable jigsaw which
is Hudson's.
Hudson's do not currently involve
any working beyond 6pm in the evening. It is very much a 9am to 6pm
working franchise. Hudson's do not currently trade on Sundays, although
this would be allowed inside the franchise agreement should the franchisee
wish to extend the trading hours an additional day.
Hudson's
franchises: the franchise training |
One of the most essential aspects
of getting a Hudson's Franchise off the ground is the training provided
both pre-opening and post-opening. It is vital that support at this
stage is at its height since this is the time when things are more likely
to go wrong.
Initial Training
Undertaken at a location remote to Hudson's Flagship Operation. Meeting
with the founder of Hudson's and learning about the background to the
company and the ethos behind it and the way the operation fits into
both. Duration - 2 days
Secondary Training
Undertaken at Hudson's Flagship location in Birmingham City Centre.
Comprising two weeks of working through every position in the business.
Starting by washing up, making beverages and sandwiches, working in
the food shop, waiting on tables and then helping to run a busy weekday
with the manager Diane Bevan.
Duration - 10 days
Tertiary Training
Undertaken at Hudson's and offsite as time permits. Consisting of a
full business understanding of how the administration matters go to
make up the weekly profit and loss account and ultimately the business
accounts. Meeting to discuss approaches to Staff Recruitment and Ongoing
Training and to discuss longer term goals for the business and the understanding
of measures for the Hudson's business.
Duration 5 days
And
Then Finally
A return to a remote location to discuss how all these aspects fit into
the Hudson's operation and a test to see how much of this information
has been assimilated in the training period.
Duration 1 day
Upon opening
An input from the Hudson's Franchise Team to ensure that the "hand
holding" on D Day plus 5 goes well and that all last minute operational
matters are dealt with.
Duration 5 days
It is also imperative that the Franchisee
makes continual use of training updates for the staff in the business.
These will be posted at internet addresses to be viewed by the franchisee.
The importance of staff training and ongoing franchisee training cannot
be overestimated
Hudson's have now
committed themselves to expanding the company via franchising. Initially
this will take place in The United Kingdom and then further afield.
There has already been tremendous interest both in the United Kingdom
and overseas. Discussions are taking place regarding 3 overseas potential
franchisees and a number of negotiations are underway regarding expansion
in the UK market.
There are opportunities currently
available at locations throughout the UK. It is our intention to grow
the business slowly and with great direction and we will be awarding
international franchises in the year 2005-2006
You should have good management
ability, access to cash for the investment, determination, massive amounts
of drive and not necessarily a food background (in fact we prefer it
if you don't).
The opportunity therefore arises
for people to work in a high quality, proven food business with consistent
profitability and standards and be part of an award winning company
with superb future prospects.
Intial franchisees will be getting
in early to a unique and special project and the opportunity to be part
of a youthful, vibrant and exciting company.
